The cuisine that has been enjoyed at the ORSOGRIGIO restaurant for almost thirty years could be described as "traditional-territorial". However, a single course is enough to realise how limiting this definition is. An example: "Cappelletti with our fossa cheese with Jerusalem artichoke cream from the garden" transforms tradition into creative, avant-garde cuisine.
Cristian has been cooking since 1984, when, at the age of 11, his father wanted him to join his side during his early days as a restaurant manager. Thus began Cristian’s story; a story which continues to this day, and that is inextricably linked to that of the ORSOGRIGIO restaurant. He studied in Trentino, but soon expanded his horizons beyond the region. Between 1990 and 1992 he worked in Lombardy, Veneto and Tuscany in restaurants of national and international importance. At 18, he crossed national borders and began a series of professional experiences that were crucial to his education. These are the years spent in Paris, New York and Miami, working with Gualtiero Marchesi and cooking for Henri Chenot. In 2001, he was accepted into the Jeunes Restaurateurs d’Europe at the minimum age and, together with his twin brother Renzo, still forms one of the youngest teams in the whole of Europe. Since 2007, he has been a regular guest on Antonella Clerici’s RAI programme "La prova del fuoco".
